The diary as it stands is too generic for ergo sessions. How, for example, do I record an 8 x 500m interval session?

How much detail do you record?

You could just enter the title of the session to be "8x500m" and record the total time of the session. Then if you really want to track your times for a particular session, you could create a custom fitness test.
